FAJITAS RECIPE FOR A QUICK WEEKNIGHT DINNER

I’m a big fan of fajitas, so the sizzling cast iron skillet of skirt steak and veggies with a side of warm tortillas is often my go to order at a Mexican restaurant. While I love steak fajitas, they usually take a bit more forethought than I’m able to put in after a busy work day.

That’s where my ground beef fajitas recipe comes in.

We always have one pound packages of ground beef in the freezer (learn about how we buy a whole cow) which thaw pretty quickly in the microwave.

While my son will happily eat the seared bell peppers with his fajita, my daughter isn’t as crazy about them. Fortunately she loves the seasoned ground beef. So I make sure she gets some veggies, and bulk up my meat, by blending chopped mushrooms with the beef.

I love that blending mushrooms with my meat adds an easy serving of veggies to the plate. Mushrooms can easily mimic meat. Just chop them to match the consistency of the meat you’re pairing them with and no one will know the difference!

EASY FAJITA RECIPE WITH HOMEMADE FAJITA SAUCE

If you are already stopping by the store to get fajita recipe ingredients, you can totally buy some fajita seasoning or fajita sauce. But I also have an easy fajita sauce recipe that uses ingredients we always have on hand.

Our homemade fajita sauce uses lemon juice, garlic, cumin, chili powder, red pepper flakes, and a little oil. The secret ingredient is some A-1 steak sauce which adds a tangy smoky flavor.

HOW TO MAKE GROUND BEEF FAJITAS

  • Start by finely chopping your mushrooms in a food processor if you’d like to blend those with your meat.
  • Put your ground beef and chopped mushrooms into a large skillet and season with a little salt and pepper.Ground Beef and Mushrooms Cooked in a Skillet for Fajitas
  • Cook on medium high heat, stirring occasionally to break up the meat and make sure the mushrooms are totally blended in. Eventually the meat (and hidden mushrooms) should be totally brown.
  • Stir in the fajita sauce (about ½ cup) and remove the fajita meat to a bowl. Ground Beef Fajita Meat in Skillet
  • Wipe your skillet out and add a tablespoon or two of oil. I like to use avocado oil for its high smoke point, but olive oil is fine too.
  • Heat the pan on high until the oil is shimmery, then add sliced bell peppers and a sliced onion.
  • Cook the veggies, tossing occasionally with tongs or a spatula until they are softened and have a few char marks. Peppers and Onions in a Skillet for Fajitas Recipe
  • Now you can mix the fajita seasoned beef back in with the peppers and onions. If you have kids who might not want the veggies, leave some of the meat out on the side for them. Ground Beef Fajita Filling
  • You can serve your fajitas over rice (or cauliflower rice) for a fajita bowl, or serve them with corn or flour tortillas. Below are some of our favorite fajita toppings.

WHAT KIND OF TOPPINGS DO YOU PUT ON FAJITAS?

The options for topping your fajitas are pretty limitless. With these beef fajitas I like to keep it simple. Just some sliced avocado, chopped cilantro, and squirt of lime juice. But here’s a list of fajita toppings to get your creative juices flowing:

  • Sour Cream
  • Sliced Avocado
  • Guacamole
  • Lemon or Lime Juice
  • Pico De Gallo
  • Salsa Verde
  • Hot Sauce
  • Cilantro
  • Chopped Green Onions
  • Sliced Mango
  • Shredded Cheese (like Cheddar or Pepperjack)
  • Crumbled Cheese (like Cotija or Queso Fresco)
  • Sliced Jalapenos (Fresh or Pickled)
  • Pickled Radishes

This ground beef fajitas recipe is an easy fajita recipe for a kid friendly dinner that even young children can eat. Plus, if they don’t want the peppers and onions, there’s still a secret serving of veggies hidden in the ground beef!

Ingredients

  • 8 ounces crimini mushrooms
  • 16 ounces ground beef
  • salt and pepper
  • 4 ounces fajita sauce
  • 1 tablespoon avocado oil
  • 1 small yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced

To Serve:

  • tortillas or rice
  • sliced avocado
  • chopped cilantro
  • fresh limes for squeezing

Instructions

  1. Finely chop your mushrooms to match the texture of the beef. I use a food processor to chop them really quickly. Chopped mushrooms in food processor

  4. Add oil to the skillet and heat on high until it shimmers. Then add the onion and peppers. Cook about 5 minutes, tossing a couple times, until the veggies are softened. Peppers and Onions in a Skillet for Fajitas Recipe
