This Peanut Butter and Jellyfish Sandwich with zucchini noodle tentacles is a fun kid’s lunch that encourages reading.
One of my kids’ favorite ways to learn is through food. We use a game to learn about the tastes, and make ice cream in a bag to learn about the science of freezing. They also love getting alphabet kid snacks to work on their letters and encourage reading.
Each alphabet snack has a fun animal made from food. I also use food to make an upper and lower case letter that the animal name starts with.
Since most kids love peanut butter and jelly, what better way to explore the letter J than a peanut butter and jellyfish sandwich?
This alphabet kid snack is really a full meal, or can be split between multiple kiddos. Or have fun sharing it with your little one for some mommy and me time!
HOW TO MAKE A PEANUT BUTTER AND JELLYFISH SANDWICH
Start by making a peanut butter and jelly sandwich. You can use whatever nut or seed butter and jelly your child prefers.
Next you can choose whether or not you want to cut off the crusts. Our son with autism was having a sensory struggle day so I decided to cut off all the crusts.
But you can leave the top and side crusts on if you like. Just cut the bottom in a wavy pattern. I find this easiest to do with a clean pair of kitchen scissors.
For the face of your jellyfish, you can get creative with whatever is in your kitchen. I used a small round cookie cutter to cut two circles of turkey lunch meat for the whites of the eyes. Then grape halves for the rest of the eye, and a little wedge of grape for a smile.
The jellyfish tentacles are zucchini noodles. If you don’t think you will spiralize veggies very often, you can get a small handheld spiralizer.
But a larger spiralizer is much easier to use and gives you so many options. We eat a lot more vegetables because of it!
The final step is to make an upper and lower case letter J. I used grape halves for the upper case J. For a lower case j I used a zucchini noodle. Then I used the larger end of a frosting tip to cut out a dot from a strip of zucchini peel.

The idea for this alphabet kid’s snack actually came from the book Peanut Butter and Jellyfish.
It’s a wonderfully fun book that can open the door to a great discussion on being a good friend and helping people who need help. My kids love the art style, and think it’s hilarious that a seahorse is named peanut butter.

Peanut Butter and Jellyfish Sandwich
This Peanut Butter and Jellyfish Sandwich with zucchini noodle tentacles is a cute kid's lunch that encourages reading. Because learning should be fun!
Ingredients
- 2 slices whole grain bread, or gluten free bread
- 2 tablespoons peanut butter, or your favorite nut or seed butter
- 1 teaspoon jelly
- 1 slice turkey lunchmeat
- 7 red grapes, halved
- 1 small zucchini
Instructions
- Spread a slice of bread with the peanut butter and jelly, then top with the second slice.
- Use a clean pair of kitchen shears to cut the bread into a jellyfish shape.
- Use a small round cookie cutter (or a shot glass) to cut out two circles of lunch meat for eyes. Top each one with half a grape, and cut a small wedge from one grape half to make a smile.
- Slice a small strip of peel off the zucchini and use the large side of a frosting piping tip to cut a circle from it.
- Spiralize the zucchini into noodles. Place some noodles at the bottom of your jellyfish for tentacles. Use part of a noodle to make a lower case j with the circle of zucchini peel.
- Use the remaining grape halves to form an upper case J.
