Between the hustle and bustle of prepping for Christmas, the sweet treats that everyone and their mother sends your way (hey, I’m not complaining!), and the rich comfort foods that we love to indulge in this time of year, it’s no wonder we all end up battling latest bug going around!
One solution is to make sure you always bring a veggie tray to whatever holiday gathering you’re attending.
This Santa veggie tray is cute enough to hold its own against plates of snowflake cookies and platters of fudge, and the hummus and veggies will help you fill up on healthy protein and fiber before you swing by the dessert table.
TIPS FOR MAKING YOURÂ SANTA VEGGIE TRAY
If you’re bringing this Santa veggie tray to a party, it can travel okay if you wrap it in plastic really well. But it’s so easy to put together, I recommend just prepping all the ingredients and assembling it on location. Use a big white tray so Santa really pops. You could even use a big rimmed cookie sheet if you don’t have a serving platter.
You can buy a whole head of cauliflower and chop it up to save on costs, or buy a big bag of cauliflower florets to save on time. I still ended up using scissors to cut some of the cauliflower florets into smaller sizes.
Feel free to use hummus, baba ganoush, or your favorite dip in the center of the veggie tray.

Santa Veggie Tray
This cute Santa veggie tray is a magical way to bring some healthy options to your Christmas table. If you’re having trouble arranging your cauliflower florets, try trimming the stems as short as possible so they can site flatter on the tray.
Ingredients
- 1.5 cups hummus
- 1 large bag cauliflower florets
- 2 red bell peppers, sliced into strips
- 1 large package cherry tomatoes, or grape tomatoes
- 2 large black olives
Instructions
- Fill a shallow white bowl with hummus and place in the center of a large tray.
- Place cauliflower florets on the tray along the top of the bowl, this is the rim of Santa’s hat.
- Arrange bell pepper strips in the outline of Santa’s hat, then fill it in with more bell pepper strips.
- Add a large cauliflower floret for the pom pom on Santa’s hat.
- Arrange cauliflower florets below the bowl for Santa’s beard. You will want to stack them up a bit around the bowl so they reach up to the rim.
- Arrange cherry tomatoes, around the beard at the bottom of the tray to make Santa’s shirt.
- Cut the olives in half and use the ends with the X to make Santa’s eyes, placed on top of the hummus.
- Cut the end off a cherry tomato and place it below the eyes for a nose.
- Cut a small wedge from another cherry tomato and remove the seeds so you have a nice curved line of tomato. Place it under the nose for Santa’s smile.
- Arrange small pieces of cauliflower on top of the hummus, around the mouth and above the eyes, for Santa’s moustache, beard, and eyebrows.
- Keep chilled until ready to serve.
