This beautiful apple cucumber juice makes a great Appletini Mocktail for St. Patrick’s Day or any day!
Happy St. Patrick’s Day!!! I don’t normally post on Saturdays but I couldn’t help but share this lovely green juice with all of you. It’s light, refreshing and healthier than my previous cucumber juice. The combination of cucumber and apple blend together in perfect harmony to make a drink that’s perfect for kids and grown ups a like. While everyone else guzzles Guinness tonight, all of us abstaining can happily drink as much of this lovely alcohol free cocktail we’d like.I’ve been on the lookout for a cheap juicer of craigslist and freecycle, but discovered that the best place to get one was actually Goodwill! I found an older model that works just fine for only $8, and I’ve been a juicing fanatic for the past week. I haven’t really researched any nutritional claims for juicing, so I certainly won’t be making any. But I love juice and do know that making my own is cheaper and better for me because it’s pure juice from the fruits and vegetables with nothing added.
I really like those fancy juices in the organic section of the grocery store, but they’re SO expensive that I hardly ever buy them. This past week I’ve made my own juices and taken them to work in jars. In one week, the money I’ve spent on the fruit, vegetables and the juicer has been much less than what it would have cost me the buy the juice already made. Sweet!
This juice is really simple, I feel silly writing a recipe for it, but I am. Because it’s that good. Plus it will go so well with your St. Patrick’s Day outfit.
So whether you’re digging into corned beef and cabbage or Irish beef stew tonight, whip up some Apple Cucumber Juice to sip while you cook and don’t forget to wear green before you leave the house!

Apple Cucumber Juice
Ingredients
- 2 cucumbers, juiced
- 1 green apple, juiced
- 1-2 TBS agave syrup
Instructions
- Mix ingredients well and chill at least 1 hour before serving.
