This strawberry dessert is the perfect healthy sweet tooth remedy, but it’s also amazing as a side dish, snack, or even a light lunch when you’re on the go (or moving!). Strawberries are super cheap right now, it’s unfortunate for the strawberry farmers and I really feel for them. But oh boy am I getting all the berries I can eat!
I pulled up some mint from our new house and decided to whip up a strawberry salad for a treat in the midst of furiously packing up our apartment. I love the combination of herbs with strawberries, and mint is an easy pairing for the sweet and juicy fruit. You can use sugar rather than honey, but I really love the flavor of the honey and lemon juice. It’s a marriage of sweet and tangy that mingles with the strawberries’ juices to create a fantastic syrup for them to marinate in.
I’ve scheduled this post by the way. It’s Friday as I’m writing it, but Eric and I are gone all day Saturday at ministry events and wedding showers. Then Sunday is our big moving day, so I have a feeling I’ll be too pooped to post come Monday! Anyway, hopefully by the time you read this we’ll be in our new house, with a few days to get our apartment completely emptied/cleaned/whatever else I haven’t thought of.
Hopefully we’ll also have a working computer and internet there too! My computer crashed Thursday night, the blue screen of death 🙁 Fortunately Eric has it automatically back up online twice a day, so we weren’t worried about losing anything. Our car is also dead, and less easy to fix. Ah well, it comes in waves.
On a lighter note, here’s a fail I noticed at Sam’s Club the other day!
We went back Thursday to get boxes from the meat department for moving; I guess someone had noticed because they replaced it with a non-broken one. BTW if you have to move I highly recommend asking meat departments for boxes. They usually have handles and are very sturdy to hold over 50 lbs of frozen meat. Just watch out for the bloody ones. We got a whole van full!
Alright, enough moving tips, go get yourself some strawberries before the prices go up!
Strawberry Mint Salad
serves 4Ingredients
15-20 medium to large strawberries
10-15 leaves fresh mint chopped
2 TBS lemon juice
2 TBS honey
Instructions
Rinse the berries (If you’re not using all the berries you have just rinse the ones you’ll be using in the salad to preserve them). Tear the leaves off the berries and make a V cut in the top to remove the stem part. Slice berries into 3-4 pieces (I like making them heart shaped).
Mix the berries with the mint, lemon juice, and honey. Cover the bowl with saran wrap and refrigerate for at least 20 minutes before serving.
Approximate cost/serving: This only cost $1.50 to make with the price of berries right now! So that means 38 cents a serving.
Vegetarian/Gluten Free: Yes and yes!

Yum! Looks like a lovely salad. Last summer I made quite a few fruit salads with a lime juice, honey/agave and mint dressing, and they were so refreshing!
